Whoops - forgot to take a picture to show you the lovely results!
I made an amazing pizza this evening with spinach sauce (like a yummy pesto) roasted veggies: portabella mushrooms, red and yellow peppers, red onions, beets, artichoke hearts and goat cheese.
Mostly the only time I have bread or cheese, is when I indulge in pizza - and tonight, was exceptionally delightful.
With a balance of whole grain thin crust, very minimal cheese (and goat at that), no red (sugar) sauce and far more vegetables than the crust they lay on - this is a 'cheat' I can feel good about getting down with a few times a month!
Now, back to the Brussels sprouts! (I bought a HUGE bag today!)
